A New England Blogger Does Doubles

Sarah, a cook chef from Cambridge MA, is cooking her way through the world.  She is cooking a dish from every country in the world, alphabetically.  She and I share a mutual friend, who e-introduced us when she began this journey.  She’s now almost through the T countries - and guess who she contacted for information about the very best of T countries!

When she asked me about the staple dishes of Trinidad and Tobago, I mentioned callaloo, which is essentially the staple T&T dish - but which I cannot abide.  I truly hate callaloo - a fact about which many a Trinbagonian thinks I’m crazy and should rescind my passport.  Whatever - it sucks.  

There are many other Trini dishes I love - among them, doubles, which I have blogged about before (and which I ate almost every morning while I was there this month).  I have actually attempted to make doubles myself, so great is the desire for it.  (I hate to cook.)  It’s takes some skill, and I haven’t really gotten it down.

From her pictures, Sarah seems to have gotten it on her first try.  They look incredible.  Take a look, and see what I mean.  She’s included the recipe she used - perhaps you’ll be inspired!
